For the white wine of JL Chave, the grapes are vinified in a combination of 33% in French oak casks and blend for Chave Hermitage Blanc is almost always 80% Marsanne and 20% Roussanne. Following fermentation, the wine is racked off its fine lees. The wines are then aged in a combination of barrels, with a small portion that is also aged in stainless steel tanks for up to 18 months before bottling. average production is close to 1,250 cases per year. The key to the perfect balance of Chave Hermitage, whether rouge or blanc, is in Gerard and Jean-Louis' remarkable blending skill, a process that begins anew with each vintage. Like Jamet and Clape, the Chaves assemble their vintage cuvees from their expertly farmed array of sites, each with its own character, to create singular blends of great nuance, harmony, depth and aging potential.
Bottled in August, Chave's 2016 Hermitage Blanc is a tremendous wine. It's a bit closed on the nose (bottle shock?), but it wows on the palate, rocking it with seismic waves of super ripe pineapple and melon fruit and more than a small dose of what I can only describe as magma-like essence of stone. It's full- bodied and mouthfilling in its richness, yet it never seems heavy or overdone. Remember that yields were constrained by hail, so don't delay in procuring whatever your budget will allow.
