Francis took over from his father Michel in 1980, with the intent and commitment to take these already revered Pinot Noir dominant Champagnes to the absolute apex of quality. Thanks to these tireless artisans, the world has come to recognize the art form that we now lovingly refer to as ‘Farmer Fizz.’ One such humble luminary, who took his lovingly farmed and exquisitely placed Pinot Noir to Champagne’s absolute heights, is the venerable Francis Egly, of Egly-Ouriet.\n\n“Egly was among the first producers to emerge in the grower Champagne movement. The great majority are sourced from the great Ayler Kupp Vineyard and named after the pre-1971 vineyard names from which they come. The Ambonnay signature might be strawberry, forest-floor, sweet-100s. All of which are certainly present in Billiot’s wines. -Terry Theise “Billiot’s five hectares of vines are all in Ambonnay, spread over 18 parcels. Even more impressive is that all but one of their parcels are on the mid-slope, in the most favored portion of the vineyard area, expressing the classical character of this famous village. “The wines of Ambonnay are very vinous, with a lot of strength,” says Serge’s daughter, Laetitia “but they are also very fine, with delicacy and finesse. They stay fresh for a long time.” All of the wines are fermented in enameled steel tanks, which Billiot prefers to stainless steel, and the wines are neither fined nor filtered.
