You could drive through the village a hundred times without knowing it was there, yet behind these simple, unassuming wooden doors, lies one of Champagne’s great treasures. While the Laval family has been growing vines for four generations, Georges Laval began producing estate-bottled champagne in 1971. His son Vincent joined the estate after finishing his studies in 1991, and has been in charge of the cellars since 1996. Laval’s vineyard holdings comprise just 2.5 hectares, including a half-hectare of meunier in Chambrecy, in the Vallée de l’Ardre in the western Montagne de Reims, that is sold to the négoce. The other two hectares are all in the premier cru village of Cumières, spread over seven parcels. Average vine age is over 30 years, and the oldest vines of the estate are over 70 years of age. The Lavals have been practicing organic viticulture since 1971, certified by Ecocert. “It’s a little more difficult to work organically than conventionally,” says Vincent Laval. He notes that having larger parcels of vines makes it easier to work organically, with less pollution from neighbors, and over the years the Lavals have traded parcels of land whenever possible in order to assemble larger blocks of vines. In the cellar, the grapes are pressed in a traditional Coquard vertical press that holds a mere 2,000 kilograms—the minimum size allowed in Champagne—in order to ensure maximum quality and control over individual parcels. Laval’s wines are harvested ripe and almost never chaptalized, and fermentation takes place in barrel, with indigenous yeasts. The wines are bottled late, usually about ten months after the harvest, and they are neither fined, filtered nor cold-stabilized. Its wines, mostly made from Pinot Noir, are highly sought-after and known for their silky finesse. Fourrier is perhaps best known for its wine from the famed Clos Saint-Jacques Premier Cru vineyard. The domaine's vineyard holdings total 8.7 hectares (21.5 acres), located predominantly in Gevrey-Chambertin. These include parcels in seven different Gevrey-Chambertin premier cru sites, and a small plot in the Griottes-Chambertin Grand Cru vineyard. Plots in Chambolle-Musigny, including two Premier Crus, Morey-Saint-Denis and the Les Petits Vougeots Premier Cru vineyard complete the portfolio. Only fruit from vines older than 30 years old are used to make Domaine Fourrier wines. Jean-Marie Fourrier took over his family estate in 1994 aged just 23. He worked with the legendary Henri Jayer in Vosne-Romanée in the late 1980s. The latter's influence is reflected in the domaine's fastidious approach in the vineyard and minimal intervention in the winery. Much history has passed over these lands, but that of our family starts in the mid-1960’s with the dream of one man, Alceo di Napoli Rampolla, who wished to create a great wine. Indeed, Schildknecht was the first person to import the wines to the U.S. back in the 1980s. Since the reintroduction of Lauer to the U.S., the estate has gone cult. With its slightly warmer temperatures, this area is particularly prized for its Pinot Noir grapes. Combined with the Kimmeridgian limestone sub soils, the champagnes retain freshness similar to Chablis. Dominique Moreau created the estate in 2005 with a vision to produce a series of single-vineyard, single varietal, single vintage Champagnes from biodynamically grown grapes that are farmed with meticulous care. Dominique named her estate after her grandmother, Marie Courtin, whom she describes as a “woman of the earth”. Her wines come from a hillside vineyard of 35-40 year old, massale-selection Pinot Noir.The combination of low yields, clay-limestone soils (with bands of Kimmeridgian) and an east/southeast exposure gives the wines both power and cut, with an intense brininess and minerality at their core. The estate makes two cuvees, “Resonance” and “Efflorescence”, the former fermented in stainless steel, the latter in used barriques. The grapes for Efflorescence tend to come from the bottom of the hill, which she says “has greater power and potential”. At harvest, the grapes are all harvested by hand. The wines are fermented with natural yeasts that have been selected from their vineyards and cultivated separately. These native yeasts are used for both the primary and secondary fermentations. Lastly, there is no dosage added upon disgorgement. Dominique embraces a spiritual philosophy in her production and viticulture. In one particular technique, she uses pendulums (often used in energy healing practices) in both the vineyard and cellar to aid in evaluating both the evolution of the grapes on the vine as well as the wine during elevage. She explains that the pendulum changes its natural rhythm and swing based on the energy emitted from a living being, whether person, vineyard, or wine. The names of the wines carry spiritual significance for Dominique as well. “Resonance” refers to the balancing energies of earth and sky that affect the creation of a wine from its surrounding terroir. For Dominique, “Efflorescence” refers to “something that evolves in perpetuity”. Starting with the evolution encouraged by the small oxygen exchange in barrel, she feels that this wine in particular will show a very different face at each stage of its development in bottle. She recommends that both wines be served in traditional white wine glasses to allow for their development through increased aeration.

["Country_France","Price_$101 - $250","PROMO","Rating_90","Rating_92","Region_Champagne","Size_1.5 L","Type_Champagne","Type_Sparkling","Varietal_Pinot Noir","Vintage_NV","Vintagerange_MV and NV","Weight_7.00","Winery_Marie-Courtin
"option1":"Default Title","option2":null,"option3":null
["Default Title
["//cdn.shopify.com/s/files/1/1997/1819/products/1654-efflorescence-NV--1.5L.jpg?v=1516736925
//cdn.shopify.com/s/files/1/1997/1819/products/1654-efflorescence-NV--1.5L.jpg?v=1516736925
Title

Country: France

Region: Champagne

Varietal: Pinot Noir

Vintage: NV

Size: 1.5 L

Champagne Marie Courtin is located in the village of Polisot in the Cote des Bars, in the southern part of the Champagne region. Hidden away in this peaceful valley in the shadow of the noble hill of Corton was certainly the Côte de Beaune’s best-kept secret—gorgeous wines made by an honest winemaker for prices that reminded of decades past. Delarche Burgundy offers a clarity and purity of flavor that is captivating. Whites are creamy and concentrated, taking a cue from grand cru Corton-Charlemagne; reds are spicy and refined, delicious from the moment they’re bottled to years later, when you pop the cork on a perfectly cellared grand cru.
