Founder Haridimos Hatzidakis planted the original half-hectare (1.2-acre) vineyard in 1996 with the indigenous grape variety Aidani, which he cultivated organically. The winery was constructed in 1997 in a small cave as per Santorinian tradition. The first bottles of its Santorini and Mavrotragano wines were released in 1999. The Hatzidakis vineyard has since grown to encompass 10ha (25 acres) of land in the villages of Pyrgos Kallistis, Megalochori, Emporio and Akrotiri, located throughout Santorini.  All of these vineyards are farmed organically and range from 230-1150ft (70-350m) above sea level. The slopes are primarily planted with Assyrtico, Aidani and Mavrotragano. The estate also supplements its wine production with grapes sourced from other vineyards in Santorini. The Santorini terroir is characterized by volcanic soils, strong winds, limited rainfall and hot and dry summer months. The vines are grown in traditional basket shapes to shelter them from the island's strong winds and produce low yields of grapes. At the Hatzidakis Winery vineyards the vines are fertilized naturally with animal and plant manure.
